Cardamom (seeds/pods)

🌱 Vegetarian 🌿 Vegan

Description

Cardamom (pods/seeds) is a small, usually green pod containing black, shiny seeds with an intense, fresh citrus-spicy-eucalyptus aroma and a subtle sweetness. Its appearance is a hard, ribbed shell that can be easily crushed to release the fragrant seeds and essential oils. In small amounts, it provides trace amounts of fiber, potassium, magnesium, and strong volatile oils (e.g., cineole), which give it antioxidant properties and aid digestion; traditionally used as a remedy for bloating, freshening breath, and having anti-inflammatory effects. In the kitchen, cardamom pairs well with both savory dishes like curry, meat, or rice, as well as sweet ones: coffee, tea, baked goods, and desserts. It is best to store whole pods in an airtight, dry, and dark container, away from heat; ground cardamom quickly loses its aroma, so grind just before use.
