Description

Bamboo shoots are light yellow, crunchy sprouts with a delicate, slightly sweet and nutty flavor. They resemble thin, vegetable stalks cut into sticks or slices; they have a firm, juicy texture that retains its crispness after a brief cooking. They are low in calories, low in fat, and a source of fiber, potassium, B vitamins, and antioxidants, which support digestion, weight control, and heart health. In the kitchen, they work well in stir-fries, soups, salads, spring roll fillings, and curries, pairing excellently with soy sauce, ginger, garlic, sesame, meat, and tofu.
