Description

Fresh chanterelles have a distinctive, slightly nutty and earthy flavor with a subtle sweetness; they are characterized by a light yellow to amber color, irregular, funnel-shaped form, and delicate, meaty texture. They are low in calories, rich in fiber and plant protein, as well as B vitamins, and after exposure to light, they can also provide vitamin D; they contain minerals such as potassium and copper, as well as antioxidants (including ergothioneine), which support immunity and cardiovascular health. In the kitchen, chanterelles are excellent for quick frying in butter, creamy sauces, eggs, risottos, soups, and pasta dishes, as well as an aromatic addition to meats or forest dishes.
