Description

Carrot root has a sweet, slightly earthy taste and a firm, juicy texture; externally, it is found in shades of orange, but also yellow, purple, and white, with a smooth skin and conical shape. It contains a lot of beta-carotene (provitamin A), fiber, vitamins K and C, as well as potassium and antioxidants, which support eye health, immunity, the circulatory system, and digestion, while being low in calories. In the kitchen, carrots are great raw in salads and juices, as an addition to soups, stews, roasts, and pâtés, and they are excellent for baking and purées as well as for baked goods. To maintain freshness, remove the greens, store unwashed in the refrigerator in a perforated bag or damp towel, and for longer storage, keep them in sand or a cool cellar; they can also be blanched and frozen.
