Description

Liquid honey has a clear, golden color and viscosity that depends on the variety; the taste is sweet with floral, caramel, or fruity notes, with a subtle acidity in the background. It is rich in easily digestible sugars (fructose and glucose), providing a lot of energy in a small volume, as well as trace amounts of vitamins, minerals, and antioxidants. Due to its low water activity and natural enzymes, honey has antibacterial and anti-inflammatory properties, can soothe coughs, and support the healing of minor wounds, but it should be used in moderation due to its calorie content. In the kitchen, honey works well as a sweetener for tea, dressings, marinades, desserts, baked goods, and meat glazes, and it pairs nicely with cheeses and yogurt. Store in a sealed jar at room temperature, away from light and moisture; do not refrigerate, as it crystallizes more quickly at lower temperatures, and if this happens, it can be gently warmed in a water bath to regain its liquid consistency.
