Yellow mustard seeds
Description
Yellow mustard seeds are small, round seeds with a light yellow color, a slightly shiny surface, and a subtle, nutty-spicy aroma; they taste mild when whole, but release a characteristic sharper heat when crushed. They are a source of plant protein, fiber, B vitamins, and minerals such as magnesium, manganese, and selenium, as well as sulfur compounds (glucosinolates) with anti-inflammatory and antibacterial properties, which support digestion and overall immunity. In the kitchen, yellow mustard seeds are used to prepare mustards, marinades, sauces, dressings, and pickles, as well as for toasting as an aromatic accent in vegetable dishes, meats, and Indian cuisine. They should be stored in an airtight, opaque container in a cool, dry, and dark place; whole seeds retain their aroma for a year or longer, while ground seeds lose intensity much faster and should be kept in the refrigerator.
