Red wine vinegar
Description
Red wine vinegar has a distinct, sour-fruity taste with a subtle sharp note and aroma derived from red wine; its color ranges from ruby to dark red, and its clear consistency is slightly oily. It is low in calories, contains acetic acid, small amounts of minerals, and polyphenols from wine, which may support digestion, positively influence glycemic control with moderate consumption, and exhibit antibacterial and antioxidant properties, though it does not replace medical therapy. In the kitchen, it works great in dressings, marinades, glazes, for deglazing pans, pickling vegetables, and as an addition to meat sauces, game, and strong-flavored cheeses. Store it in a tightly closed bottle, in a cool, dark place away from heat sources; it does not require refrigeration, has a long shelf life, but retains optimal aroma for about 12–24 months.
