Chanterelle mushroom
Description
The edible chanterelle, also known as girolle, has an intense, slightly fruity-peppery aroma and a meaty, wavy cap in shades of golden-orange with characteristic ridges instead of gills. It is low in calories and provides fiber, plant protein, potassium, B vitamins, as well as provitamin D and carotenoids, which have antioxidant properties; regular moderate consumption may support immunity, metabolism, and bone health. In the kitchen, the edible chanterelle best enhances its flavor when sautéed in butter or oil, and pairs wonderfully with eggs, cream, pasta, risotto, poultry, and game, as well as herbs like thyme and parsley. It should be stored briefly: in the refrigerator in a paper bag or loosely wrapped, and should not be washed until preparation; alternatively, it can be dried or quickly blanched and frozen for longer storage.
