Description

Hokkaido pumpkin purée is a creamy mass with an intense, sweet-nutty flavor and a deep orange color, most often prepared from the roasted flesh of this variety, whose thin skin is sometimes edible. The consistency is smooth and silky, with a subtle earthy note, making it a versatile ingredient for both sweet and savory dishes. Nutritionally, the purée is low in calories, rich in fiber, beta-carotene (a precursor to vitamin A), vitamin C, potassium, and antioxidants, supporting vision, the immune system, and digestion. In the kitchen, it works well as a base for cream soups, sauces, risottos, gnocchi, fillings for pies and cakes, and as an addition to curries and pasta; it pairs excellently with sage, peanut butter, coconut, cinnamon, thyme, and cheeses.
