Description
Lactose-free gouda cheese has a mild, creamy-nutty flavor and a smooth, elastic texture with a light orange to yellow hue. The rind may be waxed, and the interior is uniform, sometimes with small holes; the taste resembles classic gouda but is safe for those with lactose intolerance. It is a good source of protein, calcium, phosphorus, and B vitamins (including B12) and vitamin A, supporting bone health and metabolism. The lactose-free version makes it easier to digest for sensitive individuals, but it's worth monitoring portion sizes due to the content of saturated fats and salt. In the kitchen, lactose-free gouda works well in casseroles, sauces, toasts, salads, and as a cheese on a cheese board; it melts beautifully and pairs well with fruits, nuts, and bread. Store in the refrigerator wrapped in wax paper and a loose package, at a temperature of 2–6°C, and it's best consumed within 2–3 weeks after opening; long-term freezing is not recommended to avoid losing its texture.
