Description

Goat cheese (log) is a soft, white cheese in the shape of a cylinder with a delicate, creamy texture and a subtle, slightly tangy flavor with a characteristic "goaty" note. The rind is smooth, the flesh is uniform, and it gently melts when cut; the aroma is fresh and not aggressive. It is a good source of protein, calcium, and B vitamins, and it also contains beneficial fats and usually less lactose than cow's milk, making it better tolerated by people with mild intolerance. In the kitchen, goat log pairs wonderfully with salads, canapés, casseroles, tarts, and pizza, and it complements honey, nuts, beets, and herbs, adding depth to creamy sauces. Store in the refrigerator at 2–6°C, preferably in its original packaging or wrapped in parchment and in an airtight container; after opening, consume within a few days and take it out about 20–30 minutes before serving to allow it to reach temperature and full flavor.
