Description

Goat cheese has a creamy white color, a delicate, sometimes slightly grainy texture, and a distinctly tangy, milky flavor with a subtle, characteristic hint of goat fats. It is usually milder than aged goat cheeses and spreads easily or crumbles. Nutritionally, it provides valuable protein, calcium, and phosphorus, as well as B vitamins; it also contains medium fat and less lactose than cow's cheese, which often makes it easier to digest for sensitive individuals. Some varieties contain beneficial lactic acid bacteria that support gut microflora.
