Description
Cheddar cheese has a strong, salty-nutty flavor with a creamy, sometimes crumbly texture; its color ranges from creamy to intensely yellow depending on aging and the addition of coloring. It appears as a dense, homogeneous mass with possible small holes and a smooth rind in the form of a piece or block, making it easy to slice, melt, and grate. Nutritionally, it provides protein, calcium, phosphorus, vitamins A and B12, as well as energy from fats and calories, which supports bone building and a feeling of fullness, but one should consider the content of saturated fats and sodium. It pairs well with sandwiches, casseroles, sauces, burgers, tarts, and cheese boards. Store in the refrigerator wrapped in parchment or wax paper and loosely in foil, using within a few weeks; it can be frozen, but it will lose some texture.
