Description

The zest of one orange is an intensely aromatic, bright orange shred with glistening, oily droplets; the flavor is distinctly citrusy with a hint of sweetness and a slightly bitter, herbal finish, if we avoid the white pith. As an addition, it has low energy value, provides small amounts of fiber and vitamin C, and above all, concentrated essential oils (limonene) and flavonoids (hesperidin), which have antioxidant, anti-inflammatory properties and support digestion and immunity. In the kitchen, grated zest beautifully enhances cakes, creams, jams, and desserts, enriches sauces, marinades, dressings, and cocktails, and pairs excellently with fish, poultry, and vegetable dishes as a finishing touch. Store fresh zest in an airtight container in the fridge for 1–2 days or freeze it spread out on a tray in a bag for up to 3 months; dried zest should go into a dark, airtight jar.
