Fresh lemon juice
Description
Fresh lemon juice has a light yellow, clear color and an intense, refreshing taste — definitely sour with a delicate citrus aromatic note that brightens dishes and drinks. Fresh juice adds freshness to marinades, dressings, sauces, desserts, and cocktails, stabilizes flavors in soups and sauces, prevents browning of fruits and vegetables, and pairs well with fish, poultry, vegetables, and baked goods. It is low in calories, rich in vitamin C, and contains flavonoids and citric acid, which support immunity, help in the absorption of iron from plant products, and act as an antioxidant. To preserve nutritional value and freshness, store the juice in a sealed, preferably glass container in the refrigerator for 2–3 days or freeze in portions (ice cubes) for longer, avoiding exposure to light and air.
