Description

Dried forest mushrooms are characterized by a concentrated, intense umami aroma with earthy and slightly nutty notes; after drying, they have a dark, wrinkled skin and a hard, brittle structure, which regains some of its original firmness after soaking. They are low in calories, relatively rich in protein and fiber, and a source of B vitamins, vitamin D (to a lesser extent), and minerals such as potassium, iron, and copper; they also contain polysaccharides and antioxidants that support the immune system and digestion. In the kitchen, they perfectly enhance soups, risottos, sauces, stews, fillings, and pasta, and the soaking water is a valuable broth with an intense flavor. Store them in an airtight, dry, and dark container in a cool place, away from moisture; before use, soak in warm water for 20–30 minutes, and if not using immediately, check for freshness and any insects.
