Low-sodium chicken broth

Description

Low-sodium chicken broth has a clear, golden color and a delicate, aromatic scent of chicken with a subtly detectable umami note; due to its reduced salt content, the flavor is subtle and allows for better control over seasoning dishes. As a low-sodium product, it provides few calories, trace amounts of protein and fat, as well as minerals such as potassium and magnesium; homemade bone broths also contain collagen and amino acids (e.g., glycine), which support hydration and tissue regeneration, and the lower sodium content is beneficial for those concerned about blood pressure. In the kitchen, low-sodium broth works well as a base for soups, risottos, sauces, stews, and for cooking grains as well as poaching delicate meats and fish, allowing for control over salting at the final stage. Once cooled, it should be stored in an airtight container in the refrigerator for 2–3 days or portioned and frozen for about 3 months; it is important to cool it quickly and fill containers hygienically to preserve flavor and safety.
