Description

Dried forest mushrooms (mainly porcini and bay boletes) have an intense, earthy-nutty aroma and a deep umami flavor; after soaking, they regain a meaty texture, and their pieces are dark and wrinkled. They are low in calories, rich in protein and fiber, and provide minerals such as potassium, phosphorus, magnesium, and iron, as well as B vitamins. They contain antioxidants and polysaccharide compounds that support the immune system and may positively affect gut microbiota. In the kitchen, they perfectly enhance the flavor of soups, sauces, risottos, stews, fillings, and meat dishes, and they pair well with pasta and one-pot meals. They should be stored in a dry, airtight container in a cool, dark place, away from moisture; after soaking, use within 24–48 hours or freeze, and ground ones can be used as a seasoning.
