Chives (finely chopped)
Description
Chives are delicate, thin, light green stalks with a chive-onion, mild aroma that adds freshness to dishes without overpowering the flavor. Finely chopped, they look impressive as a green garnish, catching the eye and highlighting the composition of the dish. They are low in calories and rich in vitamins A, C, and K, as well as folates; they also contain sulfur compounds and antioxidants that may support immunity, cardiovascular health, and bone health with regular consumption. In the kitchen, chives pair perfectly with eggs, cheeses, soups, salads, potatoes, fish, and sauces, best added just before serving to preserve their aroma and color. Store in the refrigerator wrapped in a slightly damp paper towel in an airtight container or in a glass of water, changing the water every few days; for longer storage, it’s best to freeze finely chopped chives in oil or butter in cubes.
