Gelatin (powder)
Description
Powdered gelatin is an odorless and nearly tasteless substance with a light, transparent color when dissolved and a gel-like, shiny consistency when set. It mainly consists of hydrolyzed collagen, providing primarily low-calorie protein, but it is an incomplete source of amino acids (deficient in tryptophan). Regular, moderate consumption may support skin elasticity, joint health, and tissue regeneration, and can have beneficial effects on the function of the mucous membrane of the digestive tract. In the kitchen, gelatin works well in jellies, mousses, no-bake cheesecakes, terrines, creams, and as a stabilizing agent for sauces, glazes, and desserts. It should be stored tightly sealed, in a dry and cool place, away from moisture and strong odors; an opened package is best kept in an airtight container. It is important to remember that the product comes from animal sources, which is significant for vegetarian and vegan diets.
