Preparation steps

Start by preparing the aromatic ingredients. Wash the orange very thoroughly under running water, then pour boiling water over it, scrubbing its skin with a brush. This will remove wax and impurities. Cut half of the orange into thin slices (about 3-4 mm thick), and squeeze the juice from the other half into a small bowl. Peel a piece of ginger using a small knife or the edge of a teaspoon, then cut it into thin slices.

Use a sharp knife to cut the oranges so that the slices are even and not torn. Blanching the peel is key if you plan to drink the beverage with slices inside. A teaspoon is great for peeling ginger – its edge fits perfectly to the irregular shape of the rhizome.

In a large pot (with a capacity of at least 2.5 liters), pour in 1000 ml of apple juice and 500 ml of cranberry juice. Add the prepared orange slices, ginger slices, two cinnamon sticks, about 10 cloves, and two star anise. Also, pour in the juice squeezed from the other half of the orange. Gently stir everything with a large wooden spoon.

It is best to use a pot with a thick bottom that evenly distributes heat and prevents the juices from burning at the bottom. At this stage, do not add honey or maple syrup yet, as high temperatures will destroy their valuable properties.

Place a pot on a medium heat burner. Slowly heat the beverage until it becomes very hot, but do not bring it to a boil. Watch the surface - small bubbles should start to appear at the edges of the pot and steam should rise. Once the beverage is hot, reduce the burner to the lowest setting, cover the pot with a lid, and let it gently heat for about 20-25 minutes. This process is called 'warm maceration' and it will allow the full flavor of the spices and fruits to be extracted.

It is crucial not to bring the drink to a boil! Boiling can cause the juices to become bitter, and the valuable essential oils from the spices will evaporate. A gentle 'simmer' on the lowest heat is ideal. If you don't have such a small burner, you can occasionally remove the pot from the heat for a minute.

Remove the pot from the heat and let it sit for 2-3 minutes to cool slightly. Now is the time to add sweetness. Pour in 2 tablespoons of honey and stir well until completely dissolved. Taste, and if you prefer a sweeter drink, add more honey to your liking. Strain the mulled wine through a fine mesh sieve directly into mugs or thick glass cups to separate the used spices and fruit pieces. Additionally, if you wish, you can add a few fresh cranberries to each cup for decoration.

Honey added to liquid that is too hot (above 60°C) loses its health benefits, so it's worth waiting a moment. Straining the drink will ensure a clear, pleasant liquid to drink, but if you like a 'mess' in your cup, you can skip this step and ladle the drink, trying to catch the fruits and spices.

To give the drink a unique character, just before serving, garnish each portion with a sprig of fresh rosemary. To release its essential oils, you can gently tap the sprig against the rim of the cup before placing it inside. The aroma of rosemary will beautifully complement the spicy-fruity composition and add a forest note to it.

This is an optional step, but highly recommended for achieving the 'wow' effect. The contrast of green rosemary with the deep red of the drink looks stunning and adds a professional touch. You can also use a fresh slice of orange.
