Description

Agar agar (powder) is a colorless or light yellow powder with a neutral, slightly marine taste that, when dissolved and cooled, forms a transparent, firm gel. It has almost zero calories and is mainly composed of insoluble polysaccharides that are fiber; it also provides trace amounts of minerals such as calcium, magnesium, and iron. As a plant-based alternative to gelatin, it promotes a feeling of fullness and regulates bowel function, although in excess it can cause bloating, so it is advisable to use it in moderation. In the kitchen, agar is perfect for vegan desserts, jellies, creams, mousses, low-sugar jams, as well as a stabilizer for sauces and an excellent ingredient in molecular cuisine — it dissolves in boiling water and sets at room temperature, giving a firmer consistency than gelatin. Store the powder tightly closed in a dry, cool, and dark place, away from moisture and heat sources; when properly stored, it has a very long shelf life.
