Description
Yellow cheese (e.g., gouda, cheddar) is characterized by a smooth, firm texture and a color ranging from creamy to intensely yellow. Its flavor can be mild, slightly nutty, or distinctly sharp and spicy, with a creamy, melting consistency when heated. From a nutritional standpoint, it is a concentrated source of protein, calcium, vitamin A, and B12, as well as saturated fats and sodium; in moderate amounts, it supports bone health and tissue regeneration, but due to its calorie content and fat content, it should be consumed in moderation. In the kitchen, it works perfectly as an addition to sandwiches, casseroles, cheese sauces, salads, and fondue — it melts wonderfully and enhances the flavor of dishes. It should be stored in the refrigerator wrapped in parchment or wax paper, and then in a loose bag or container, at a temperature of about 0–4°C; it can be sliced before freezing, although freezing slightly alters its texture.
