Description
Vegetable broth concentrate has an intense, complex vegetable-umami flavor with a delicate sweetness from carrots and onions, along with a spicy note from celery and leeks; it resembles a thick paste or melted cube with a dark golden-brown hue, easily dissolvable in water. As a concentrate, it provides a low amount of calories and fat with a significant sodium content, as well as certain minerals and vitamins derived from vegetables; when used sparingly, it can enhance the flavor of dishes without significantly increasing the energy value, although those monitoring their salt intake should pay attention to the dosage. The concentrate works great as a base for soups, sauces, risottos, braised vegetables, and marinades, as well as for enhancing the flavor of one-pot dishes and grains. Once opened, it should be stored in an airtight container in the refrigerator and used within a few weeks, and portions can be frozen in ice cube trays for convenience.
