Description

Raw beets have an intense, earthy-sweet flavor and a deep burgundy-purple color with visible concentric streaks of flesh; the skin is thin and stains hands and fabrics when crushed. They are low in calories, rich in natural nitrates, folic acid, fiber, potassium, vitamin C, and antioxidant betalains, which help lower blood pressure, improve physical performance, reduce inflammation, and support digestion. In the kitchen, raw beets are great for salads and coleslaws when grated or thinly sliced, for carpaccio, juices, and smoothies, as well as for pickling; they pair well with goat cheese, citrus fruits, nuts, and grains. It is best to store them unwashed, trimmed 2 cm from the leaves, in a cool (0–4°C), humid drawer of the refrigerator in a perforated bag, which extends freshness for several weeks.
