Description
Cooked and peeled beets have a sweet-earthy flavor with a delicate nutty note and a soft, juicy texture; their deep carmine color and shiny surface add visual appeal to dishes. They are low in calories, rich in fiber, folic acid, vitamin C, and potassium, as well as nitrates and betalain antioxidants, which may support the circulatory system, lower blood pressure, have anti-inflammatory effects, and aid digestion and physical performance. In the kitchen, they are suitable for salads, soups (e.g., borscht), pâtés, creams, dips, sandwiches, and smoothies; they pair wonderfully with goat cheese, walnuts, citrus fruits, balsamic vinegar, and herbs. They can be stored in the refrigerator in an airtight container for 3–5 days; they can also be portioned and frozen for about 3 months.
