Description

Pearl onions are small, round onions with a diameter of about 1–2 cm, usually white or light yellow, with smooth, thin skin and several compact layers of flesh. They have a delicate, slightly sweet flavor with a subtle sharp note; when raw, they are crunchy, after a short cooking process they gain sweetness and softness, and when caramelized, they acquire a mild, buttery aroma. They are low in calories, provide fiber, vitamin C, small amounts of B vitamins, and minerals such as potassium. They contain sulfur compounds and flavonoids, such as quercetin, which exhibit anti-inflammatory and antioxidant properties, supporting immunity and cardiovascular health. Pearl onions pair well with braised meats, stews, marinades, and preserves, as an accompaniment to roasts, French dishes, or salads. They are best stored unpeeled in a cool, dry, and well-ventilated place, away from potatoes; peeled ones should be kept in the refrigerator in a closed container and used within a few days.
