Description
Grated horseradish from a jar is a creamy, slightly grainy paste with a characteristic, intensely sharp and pungent aroma, and a whitish-cream color. The scent releases volatile sulfur compounds (isothiocyanates), which provide a pleasant feeling of warmth and temporary tearing. The product is low in calories, contains vitamin C, fiber, and sulfur compounds with antibacterial and anti-inflammatory properties, can stimulate digestion, and relieve a stuffy nose; people with sensitive stomachs should use it cautiously. Horseradish pairs well with meat (especially roasted and smoked), fish, eggs, sauces based on cream or mayonnaise, and as an addition to sandwiches and cold appetizers. Once opened, it should be stored in the refrigerator in a tightly sealed jar, protected from light and high temperatures; for longer preservation of aroma, it can be portioned and frozen.
