Lemon (with peel and juice)
Description
Lemon with peel and juice has an intense, refreshing-sour taste with distinct aromas of essential oils contained in the peel; it is bright yellow on the outside, smooth or slightly porous, and juicy and segmented on the inside. It is low in calories, rich in vitamin C, flavonoids, and citric acid, providing small amounts of fiber and potassium; it supports immunity, iron absorption, has antioxidant properties, and may aid digestion and prevent kidney stones. In the kitchen, lemon goes well with almost everything: sauces, dressings, marinades, fish, poultry, salads, baked goods, and beverages; the zest intensifies the aroma, while the juice adds freshness and balances fat. Store whole fruits in the refrigerator at around 4°C for a few weeks, at room temperature for up to a week; keep grated zest in an airtight container, juice in the refrigerator for a few days, or freeze in cubes.
