Description
Dark chocolate (min. 70% cocoa) is characterized by an intense, distinctly bitter taste with subtle fruity, nutty, and coffee notes, as well as a dark, matte color and smooth texture. Due to its high cocoa mass content, it provides catechins and flavonoids with antioxidant properties, as well as magnesium and iron; it may support heart health, improve mood and concentration, but it also contains calories and fats, so it is best consumed in moderation. In the kitchen, it works great in baking, ganache, sauces, glazes, mousse desserts, and pralines, adding depth of flavor to savory dishes as well, such as meat sauces or mole. Store it in a dry, cool place (preferred temperature 15–18°C), in an airtight container, away from strong odors and light; avoid frequent storage in the refrigerator to prevent "blooming," and if it has been chilled, bring it back to room temperature before opening.
