Game (roe deer)

Description

Venison from deer has a dark red, finely grained muscle with an intense yet subtle game flavor — slightly sweet and less "wild" than that of larger deer. The meat can be lean, with a firm texture and a natural forest aroma that pairs well with spicier seasonings. It is a source of lean, high-quality protein with relatively low fat and saturated fat content, rich in iron, B vitamins (especially B12), zinc, and selenium; it has a favorable fat profile compared to fatty meats. This supports tissue regeneration and can be a good component of a balanced diet. Deer meat is used for steaks, roasts, stews, pâtés, and cold cuts, and it pairs excellently with juniper, red wine, mushrooms, and root vegetables. Store refrigerated at 0–4°C and consume within 2–3 days or tightly wrap and freeze (-18°C); thaw slowly in the refrigerator and avoid refreezing.
