Description

Canned peas are small, light green balls with a delicate, slightly sweet and earthy flavor, and a soft yet firm texture after cooking and preservation. In canned form, they retain most of their plant protein, dietary fiber, vitamins (especially vitamins C, K, and folic acid), and minerals such as iron and potassium, while having a low fat content; their antioxidant properties and high fiber content support digestion, stabilize blood sugar levels, and promote cardiovascular health, although it is advisable to be cautious about the salt content in the brine and rinse the peas before use to reduce it. Peas are suitable for salads, soups, risottos, one-pot dishes, spreads, and purees, as well as a quick addition to pasta and main dishes; they pair wonderfully with mint, butter, cheeses, and cold cuts. Unopened cans should be stored in a dry, cool place, and once opened, transfer the peas to an airtight container and keep in the refrigerator for a maximum of 3–4 days, and if you want to store them longer, blanch before freezing for better texture.
