Wood ear mushrooms
Description
Wood ear mushrooms have a delicate, mildly earthy flavor and a crunchy, gelatinous texture; they are usually dark brown to black, thin, and resemble the shape of an ear. They are low in calories, rich in fiber and polysaccharides, and contain minerals such as iron and potassium, as well as certain B vitamins; as a result, they support digestion, promote a feeling of fullness, and have antioxidant properties. In traditional diets, they are attributed beneficial effects on circulation and lipid profiles. In the kitchen, they work well in soups, stir-fries, salads, and fillings for spring rolls, as they absorb the flavors of soy sauce, garlic, and ginger and pair well with meat, tofu, and vegetables. They are most often purchased dried — before use, they should be soaked in warm water, stored dried in a sealed, dry place, and fresh in the refrigerator in a paper bag, to be used within a few days.
