Dried mushrooms (e.g. porcini)
Description
Dried mushrooms, such as porcini, have an intense, earthy, and deeply umami flavor, along with a dark brown, wrinkled surface; after soaking, they regain a springy texture and concentrated forest aroma. They are low in calories, rich in fiber and plant protein, as well as B vitamins (niacin, riboflavin), and minerals such as potassium and selenium; they also contain polysaccharides and antioxidants that support immunity and gut health. During the drying process, some nutrients become concentrated, and when exposed to light, they can provide certain amounts of vitamin D. In the kitchen, dried mushrooms are excellent for risottos, sauces, soups, fillings, meat dishes, and pasta; it is advisable to soak them beforehand, keeping the soaking water as a flavorful broth. They should be stored in an airtight container in a cool, dark, and dry place, away from moisture; for longer storage, a moisture absorber can be added or they can be kept in the refrigerator, which extends their shelf life.
