Description

Xanthan gum is a tasteless, white or slightly creamy powder with a fine, powdery consistency that forms transparent, sticky gels when dissolved. Nutritionally, it provides very few calories and is a soluble carbohydrate polymer that acts like soluble fiber; when consumed in small amounts, it is safe and may help stabilize blood sugar levels and improve feelings of fullness, although in excess it can cause gastrointestinal discomfort in sensitive individuals. Culinary uses of xanthan gum include thickening sauces, dressings, and soups, improving the texture of gluten-free baked goods, stabilizing emulsions, and achieving a creamy consistency in ice creams and creams.
