Description

Tofu is a delicate, creamy white block with a mild, slightly nutty flavor, available in versions ranging from silken to soft, firm, and extra-firm. Its neutral flavor profile allows it to easily absorb the tastes of marinades and spices, and its texture changes depending on the preparation — frying and baking firm it up, while freezing gives it a meaty, porous quality. As a soy product, tofu is a good source of complete plant protein, low in fat, cholesterol-free, and contains iron, calcium (especially when calcium sulfate is used), magnesium, and heart- and bone-friendly isoflavones. It is typically used in stir-fries, soups, salads, as a base for spreads, in grilling, frying, and silken tofu for desserts and smoothies. It is stored in the refrigerator in water, changing it daily or in an airtight container; it can also be frozen for a different texture.
