Description

Choy sum is a delicate Asian vegetable with bright green, crunchy stems, fleshy leaves, and small yellow flowers that give it a slightly sweet, somewhat peppery aroma reminiscent of a mix between bok choy and mustard. Its appearance is similar to young cabbage with tender shoots and glossy leaves. It is low in calories, rich in vitamins A, C, and K, folic acid, calcium, and fiber, as well as antioxidants that support immunity, bone health, and the digestive system. In the kitchen, choy sum works great in quick stir-fries, blanching, steaming, soups, and noodle dishes, pairing well with garlic, ginger, soy sauce, oyster sauce, sesame, seafood, meat, and tofu. Store unwashed bunches in a perforated bag in the refrigerator, in the vegetable compartment, and it is best to use within 3–5 days; excess moisture weakens the structure of the leaves, and for longer storage, it is advisable to blanch and freeze.
