Description

Roasted coffee beans are visually shiny, dark brown or almost black beans with a distinct aroma of roasting, caramel, and hints of nuts or chocolate. The flavor can range from slightly floral to intensely bitter and smoky, depending on the roasting level. From a nutritional standpoint, coffee provides very few calories on its own, is a source of caffeine and numerous antioxidants, primarily chlorogenic acids; moderate consumption may improve alertness, mood, and metabolism and is associated in studies with a lower risk of certain chronic diseases. In the kitchen, ground beans are used to prepare espresso, pour-overs, French press, or cold brew, as well as an aromatic addition to baked goods, sauces, and marinades. It is best to store whole beans in an airtight, opaque container in a cool, dry, and dark place; avoid moisture and frequent exposure to air, and use within a few weeks after opening to preserve the aroma.
