Potato flour
Description
Potato flour is a fine, white, homogeneous powder with a neutral, slightly sweet taste and a distinctly starchy texture. It consists mainly of carbohydrates (about 80–85 g per 100 g), providing around 330–350 kcal/100 g, while proteins and fats are present in trace amounts. It is naturally gluten-free and easily digestible; it contains resistant starch, which can support gut microbiota after cooling, making it recommended for people with gluten intolerance, with caution advised for diabetics due to its high glycemic index. In the kitchen, potato flour is excellent for thickening sauces, soups, and puddings, adds crispness to coatings, and improves the texture of gluten-free baked goods. Store it in an airtight container in a cool, dry, and dark place, away from moisture and heat sources; an opened package is best used within 6–12 months.
