Lactarius
Description
Lactarius is a mushroom with a characteristic, meaty cap often in shades of orange, brick, or brown with concentric rings and a surface that is either tubular or gilled, releasing milky sap when damaged. The taste can be mild, nutty with a slightly spicy aftertaste depending on the species, and the aroma is pleasantly woody and earthy. The nutritional values of Lactarius include low calories, moderate protein content, fiber, and B vitamins, as well as minerals such as potassium and selenium; it contains antioxidants that support the immune system and overall body condition. In the kitchen, Lactarius is great when sautéed in butter, stewed in sauces, pickled, or added to soups, risottos, and meat dishes, pairing well with onions, cream, and herbs. It has a short shelf life, best stored in the refrigerator in a paper bag or breathable container, gently cleaned without prolonged rinsing; for longer preservation, it can be dried, frozen after blanching, or pickled.
