Mortadella
Description
Mortadella is an Italian cooked cold cut with a smooth, uniform texture, light pink color, and visible white specks of fat, sometimes with pistachios. The flavor is mild, slightly spicy, and has a velvety consistency, making it suitable for both cold dishes and after a light heating. Nutritionally, mortadella provides protein and energy from fat, contains B vitamins, and minerals such as iron and zinc, but it is also relatively high in fat and salt, so it is advisable to consume it in moderation or choose lower fat/nitrite options. In the kitchen, it works well in sandwiches, antipasti, salads, diced into pasta, or as a topping for pizza and frittata. It should be stored in the refrigerator (0–4°C), in its original packaging until the expiration date; once opened, tightly wrap it or place it in a container and consume within 3–5 days. Freezing is possible, but it alters the texture.
