Yellow bell pepper
Description
Yellow bell pepper is a sweet, slightly fruity variety of pepper with a crunchy, meaty texture and a shiny, vibrant yellow skin, usually bell-shaped with several seed chambers. Its flavor is mild and slightly sweet, less bitter than green pepper, making it a versatile ingredient both raw and cooked. It is low in calories, rich in vitamin C, carotenoids (beta-carotene, lutein, zeaxanthin), folates, and fiber, which supports immunity, skin and eye health, as well as antioxidant and anti-inflammatory effects. In the kitchen, it pairs well with salads, salsas, grilled dishes, baking, and stuffing, as well as Mediterranean dishes, fish, poultry, and cheeses, adding color and sweetness. To maintain freshness, store it in the refrigerator in the vegetable drawer, preferably uncut and dry, for 1–2 weeks; once cut, it should be kept in an airtight container and used within 2–3 days.
