Description
Parmesan for sprinkling is a hard, long-aged cheese with a grainy, slightly crumbly texture and a light straw color. Its flavor is intense, umami, nutty-salty with distinct notes of caramelized protein, making it an excellent addition that enhances the aroma of dishes. From a nutritional standpoint, parmesan is a concentrated source of protein, calcium, phosphorus, and vitamins A and B12, which supports bone health and a feeling of fullness; however, it should be used in moderation due to its saturated fat and salt content. It is typically used as a topping for pasta, risotto, soups, salads, and roasted vegetables, as well as an element in gratins and sauces, with the best aroma achieved when freshly grated from a piece. Store in the refrigerator wrapped in parchment or in an airtight container, away from strong odors; grated cheese loses freshness more quickly, so it's advisable to keep a piece and grate it as needed, and if necessary, it can be frozen, accepting an unknown change in texture.
