Description
Parmesan is a mature, hard cheese with a light yellow, grainy texture and an intense, nutty-umami flavor with a distinct saltiness; it adds depth of aroma to dishes even in small amounts. It is most commonly used freshly grated or in shavings to sprinkle on dishes just before serving, enhancing the flavor of soups, sauces, salads, and pasta. Nutritionally, parmesan is a concentrated source of protein, calcium, and B vitamins, particularly B12, which supports bones and metabolism. Due to its high fat and salt content, it is advisable to use it sparingly. Store a piece of cheese wrapped in parchment or a paper towel in an airtight container in the refrigerator; avoid direct contact with foil. Grated parmesan can be stored in the freezer, which extends its shelf life.
