Black pepper (ground)
Description
Ground black pepper is a fine, dark brown powder with a distinct, spicy, slightly earthy and peppery aroma with a bitter note. It has a sharp, warming effect on the palate that enhances dishes without overpowering their structure. It contains the compound piperine, which has antioxidant and anti-inflammatory properties and improves the absorption of certain nutrients, such as curcumin; it is also low in calories and provides trace amounts of minerals. However, it should be used in moderation, as large amounts can irritate the digestive tract. In the kitchen, ground black pepper is a versatile addition to meats, soups, sauces, salads, eggs, and marinades, as well as a finishing spice. Store it in an airtight container, away from light, heat, and moisture; for the best aroma, use it within a few months, and if possible, grind just before use.
