Arugula (rocket salad)
Description
Arugula (rocket) is an intensely green plant with elongated, feathery leaves and delicate, sometimes wavy edges. Its flavor is distinctly peppery and slightly bitter, with a mustardy note, which adds character and freshness to dishes. Arugula is low in calories, rich in vitamins A, C, and K, as well as folic acid, and contains minerals such as calcium and potassium; it is high in fiber, antioxidants, and natural nitrates beneficial for the circulatory system. In the kitchen, it works great in salads, pesto, on pizza and sandwiches, as an addition to pasta, soups, or as a fresh accent to dishes with cheese, nuts, or fruits. To maintain freshness, store arugula in the refrigerator in a perforated bag or wrapped in a damp paper towel and use within 3–5 days; wash just before serving.
