Grated orange zest
Description
Grated orange zest has an intense, fresh citrus aroma with a slightly bitter, herbal note; its fine, orange shavings are highly aromatic, and the white part (albedo) left too thick can add undesirable bitterness. It contains few calories and is a source of vitamin C, essential oils (mainly limonene), as well as polyphenols and antioxidants that support immunity, digestion, and have anti-inflammatory properties. In the kitchen, grated zest is suitable for both desserts and savory dishes — it flavors cakes, creams, sauces, marinades, dressings, drinks, and dishes with fish, poultry, and salads. For the best quality, wash the fruit before grating and use a fine grater. Store the grated zest in an airtight container in the refrigerator for a maximum of 2–3 days or portion it on a baking sheet and freeze to preserve the aroma for longer.
