Tapioca starch
Description
Tapioca starch is a fine, snow-white powder with a neutral, mild flavor; when cooked, it becomes transparent and slightly gelatinous, giving dishes a smooth, silky texture. Nutritionally, it is practically a pure source of carbohydrates with low protein and fat content, naturally gluten-free and easily digestible, making it useful in elimination diets and as a quick source of energy; it is not a significant source of vitamins or minerals. In the kitchen, it is used as a thickener for sauces, soups, desserts, and fillings, for producing tapioca pearls in bubble tea, as well as an ingredient in gluten-free baking and for crispy coatings. It should be stored in a sealed, dry, and cool place, away from moisture and strong odors, preferably in a closed jar or package, which extends its freshness for up to a year.
