36% heavy cream
Description
36% cream is a thick, creamy product with a bright white color and a slightly sweet, buttery taste; due to its 36% fat content, it whips easily, creating stable, silky peaks and giving dishes a velvety texture. It is rich in energy and saturated fats and is a source of fat-soluble vitamins (A, D) and minerals such as calcium and phosphorus; when consumed in moderation, it can increase the feeling of fullness and support the absorption of certain vitamins. In the kitchen, 36% cream is great for desserts (whipped cream, creams, mousses), sauces, creamy soups, risottos, ganache, and for coffee and ice cream, and it does not curdle when gently heated. Store it in the refrigerator at a temperature of 0–4°C, in its original or tightly sealed packaging, and use it within a few days after opening; it can be frozen, but the texture may change after thawing.
