Description
Freshly squeezed lemon juice has an intense, fresh flavor — distinctly sour with a hint of bitterness and aromatic, citrus freshness; it appears clear to slightly cloudy, with a light yellow color. As an ingredient, it adds boldness to dishes and enhances other flavors without overpowering their aroma. Nutritionally, lemon juice is low in calories, rich in vitamin C and phenolic compounds, and contains citric acid; it aids digestion, helps in the absorption of iron from plant products, and acts as an antioxidant supporting immunity. In the kitchen, it has a wide range of uses: it pairs perfectly with dressings, marinades, fish and seafood, beverages, desserts, and for preserving and brightening sauces or soups.
